Roasted Garlic
I love making roasted garlic. Its milder flavor is great for using in loads of recipes, and it makes a fantastic and cost effective gift for a wonderful friend. They will be coming back for more!
Ingredients:
Fresh garlic cloves – already peeled. You can get these in large containers in the refrigerator section at Costco, BJ’s, or Sams Club.
Chicken broth
Sprigs of fresh rosemary
Olive oil
Salt
Aluminum Foil
Glass jar for storing your roasted garlic
Preheat the oven to 350 degrees
Prepare a glass dish – a casserole, loaf pan, or a cake dish will do – just have a large enough or several container to do the entire container of garlic. Put a little olive oil in it and wipe it around with a paper towel
Open the container of garlic cloves and trim the hard root end off cloves if needed
Put all of the garlic cloves into the glass dishe(s)
Add chicken broth to be approx. ¼ up the side of the dish
Put 2 – 3 sprigs of rosemary on top
Drizzle olive oil over the top of the garlic cloves and rosemary
Sprinkle salt over all
Cover tightly with aluminum foil
Bake at 350 degrees for 1 hour. Cloves are done when soft – test with a fork by mashing down on several. Be careful when taking off the foil cover, open slightly and let the steam escape before pulling off the entire cover. Let cool and place in glass jar with lid and store in your refrigerator.
Use for making garlic butter, just spreading on bread, to your homemade pizza, or in any recipe calling for garlic.
I like to cook too! I roast the entire garlic head with the peel on. But I will try your method as it might be easier to clean up. Thanks for doing the VOL blog challenge ~Kerry @elegantKB
